Wine production

Essentially, Champagne is a blended wine

In the spring, and with the collaboration of an oenologist, we blend the wines. This is a step of the utmost importance for the Champagne to come.
Our three grape varieties, as well as our vineyard (with vines of an average age of 30), provide us with a variety of unique characteristics, which enable us to re-create each cuvée.

The BRUT MAISON and the TRADITION Champagnes are elaborated from wines of the current year and wines from previous years, called reserve wines.
The “Millésimes” (vintage Champagnes) are elaborated from wine of the same harvest, a harvest from an exceptional year.

In our cellars, maintained at a temperature of 12°C, the wines acquire their richness and aromatic complexity.
Our non-vintage Champagnes are left to mature for an average period of 3 years. The vintage Champagnes are left to mature for at least 5 years.
